Spanakopita
Greek Spinach and Feta Phyllo Pie
Ingredients:
1 lb fresh spinach, washed and chopped
1/2 lb feta cheese, crumbled
1/2 cup ricotta cheese
1 large onion, finely chopped
2 cloves garlic, minced
1/4 cup fresh dill, chopped
1/4 cup fresh parsley, chopped
2 eggs, lightly beaten
Salt and pepper to taste
1/2 cup olive oil
1/2 lb phyllo dough, thawed
Directions:
Preheat your oven to 350°F (175°C).
In a large skillet, heat 2 tablespoons of olive oil over medium heat.
Add the chopped onions and garlic, and sauté until the onions are translucent.
Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes.
Remove from heat and let cool slightly.
In a large bowl, combine the cooked spinach mixture, crumbled feta, ricotta cheese, dill, parsley, and beaten eggs. Season with salt and pepper to taste.
Brush a 9×13 inch baking dish with olive oil. Layer half of the phyllo sheets, brushing each sheet lightly with olive oil.
Spread the spinach and cheese mixture evenly over the phyllo sheets.
Layer the remaining phyllo sheets on top, again brushing each with olive oil. Fold any overhanging phyllo dough over the filling.
Using a sharp knife, score the top layer of phyllo into squares or diamonds.
Bake in the preheated oven for 45-50 minutes, or until the top is golden and crisp.
Let cool slightly before cutting and serving.
