Perfectly Seared Ribeye Steak
Ingredients:
2 ribeye steaks, 1 1/2 inches thick
2 tablespoons olive oil
Salt and freshly ground black pepper to taste
2 cloves garlic, minced
2 sprigs fresh rosemary or thyme (optional)
2 tablespoons butter
Directions:
Remove the steaks from the refrigerator and let them come to room temperature for about 30 minutes before cooking.
Preheat a cast-iron skillet or heavy-bottomed pan over high heat until it’s very hot.
Pat the steaks dry with paper towels and season generously with salt and black pepper on both sides.
Add olive oil to the hot skillet and swirl to coat.
Carefully place the steaks in the skillet and sear for 4-5 minutes on each side, or until a deep brown crust forms.
Avoid moving the steaks around too much to ensure a good sear.
Add minced garlic and rosemary (or thyme) to the skillet during the last minute of cooking, and then add butter.
Baste the steaks with the melted butter using a spoon.
Remove the steaks from the skillet and let them rest for 5 minutes before slicing.
